Air Fryer Mini Potatoes

Air fryers were made for potatoes! These baby potatoes come out perfectly roasted-tender and fluffy on the inside, with crispy, golden edges on the outside. They’re seriously irresistible we can’t stop snacking on them. Even picky eaters happily dig into these bite-sized mini potatoes.

They’re quick and easy to make, which makes them a lifesaver on busy weeknights. With minimal prep, they cook up in just 12 to 15 minutes in the air fryer. You’ll have crispy, fork-tender baby potatoes on the table in no time.

They make a great side dish for just about any meal. When I have regular-sized potatoes, I usually go for my Crispy Roasted Air Fryer Potatoes or Air Fryer Baked Potatoes. But when baby potatoes go on sale, this recipe is always our go-to.

Ingredients

  • Baby potatoes – I’ve used yellow potatoes here but any kind will work.
  • Olive oil – any mild flavored neutral oil would work.
  • Garlic powder
  • Oregano
  • Salt
  • Black pepper
  • Red chili flakes
  • Parmesan cheese
  • Chopped parsley

How To Cook Baby Potatoes In Air Fryer

air fry for 10 minutes, flip them over, and cook for another 5 minutes. Enjoy!
  1. Wash and dry the potatoes.
  2. Cut in the potatoes in half if you prefer.
  3. Add salt, black pepper, oregano, red chili flakes, garlic powder and parmesan cheese into a small bowl and mix.
  4. In a large bowl, toss potatoes with olive oil.
  5. Add the spice mix to the potatoes and stir to coat.
  6. Preheat the Air fryer at 400F for 3 minutes. Transfer potatoes to the air fryer basket.
  7. Cook at 400F for 10 minutes. Shake the Air fryer basket.
  8. Reduce the temperature to 380F and cook for another 3 to 5 minutes until golden brown and crispy.
  9. Serve immediately with chopped parsley sprinkled on top.

Recipe Tips

  • Wash and dry baby potatoes thoroughly since they’re cooked with the skin on. Pre-washed packaged potatoes can save time.
  • Preheat your air fryer, or add a couple of extra minutes to the cook time if skipping it.
  • Don’t overcrowd the basket, fill only halfway for the crispiest potatoes and shake halfway through to ensure even cooking.

How To Serve

Serve air-fried baby potatoes as a delicious side dish with your favorite chicken, meat, or seafood dinners. They pair perfectly with Air Fryer Chicken Legs, Air Fryer Steak Bites or Air Fryer Shrimp.

They’re also great with dipping sauces-try them with spicy mayo, ranch, or a dollop of sour cream. Of course, these crispy roasted potatoes are so tasty, you can enjoy them all on their own too!

Crispy Roasted Air Fryer Baby Potatoes

  • Air Fryer

Ingredients
 

  • 1 pound baby potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp red chili flakes
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp parmesan cheese
  • chopped parsley to serve

Instructions
 

  • Wash and rinse the potatoes. Dry with paper towels.
  • Cut them in half or leave it whole.
  • In a small bowl, add the garlic powder, oregano, salt, black pepper, red chili flakes, parmesan cheese and mix well.
  • In a large bowl, toss potatoes with oil.
  • Add the spice mix to the potatoes and mix until well coated.
  • Preheat the Air fryer at 400°F. Place the potatoes in the Air fryer basket.
  • Cook for 10 minutes. Shake the basket or flip them over. Reduce the temperature to 380°F and cook for another 5 minutes until golden brown and roasted.
  • Serve immediately with chopped parsley sprinkled on top.

Notes

  • Store – leftovers in an airtight container in the fridge for 3 days.
  • Reheat – in the Air fryer at 350F for 2 to 3 minutes.
