Canned Tomatoes - You can use any variety of 28oz canned tomatoes but I prefer the peeled whole tomatoes as they're thicker and creamier than the diced tomatoes or crushed tomatoes.
Butter - use olive oil to make it lighter.
Onion - one of the two aromatics, sauteed onions in butter gives a rich creamy texture to the soup.
Garlic - use minced garlic cloves or garlic powder in a pinch.
Broth or Bouillon cube- chicken broth or vegetable broth can be used and they both add a lot of flavor to the soup. You can also use a chicken or vegetable bouillon cube and water.
Cream - adds a rich and velvety texture to the soup.
Sugar - a little sugar cuts down the acidity of the tomatoes.
Seasonings - salt, black pepper and paprika. Add red pepper flakes for heat.

- Heat the butter in a large pot or dutch oven over medium heat.
- Add the onion and garlic and sauté until the onion is translucent, about 2,3 minutes.
- Add the canned tomatoes, tomato paste, sugar, salt, black pepper and paprika.
- Break up the tomatoes with the back of a spoon and stir to combine all the ingredients.
- Add water and bouillon cube or broth.
- Bring the soup to a boil and then reduce the heat to low and let it simmer for 15 minutes.
- Use an immersion blender to puree the soup or transfer the soup to a blender and blend until smooth.
- Return the soup to the pot and gradually stir in the heavy cream.
- Taste and adjust seasoning as needed.
*The soup can be reheated after adding the cream but DON'T let it boil. Boiling the soup might separate it and we want to avoid that.
