  • Brioche bread – Use a day old, or stale bread. It absorbs the liquid better and won’t fall off. Substitute challah bread for Brioche.
  • Eggs – Large eggs preferred.
  • Heavy Cream – You can use half and half instead but the casserole won’t be that rich.
  • Milk – I normally use whole milk but feel free to use 2% or your favorite milk.
  • Brown sugar – Adds a nice molasses flavour and sweetness to the casserole. Sub with white sugar or any other variety.
  • Spices – Cinnamon and nutmeg
  • Vanilla extract

How to Make French Toast Casserole With Brioche

STEP ONE: Preheat oven to 350˚F. Use a tablespoon of butter to grease the baking dish.

STEP TWO: Cut the brioche bread into about 1.5-inch cubes. They should all be roughly the same size.

STEP THREE: Beat the eggs lightly in a large mixing bowl. Add the brown sugar and beat until the sugar is dissolved.

STEP FOUR: Add the heavy cream, milk, vanilla extract, spices and a pinch of salt to the egg mixture and whisk until combined.

STEP FIVE: Fill the prepared baking dish with bread cubes. Pour the custard mixture evenly over the bread.

STEP SIX: Use a spatula or spoon to press the bread down in the custard mixture so all the bread is soaked in the liquid . If you’re prepping ahead, cover the dish with plastic wrap or foil and keep it in the fridge overnight and bake it in the morning.

STEP SEVEN: Bake at 350˚F for 40 minutes or until a toothpick inserted comes clean. It should be golden brown and slightly puffed up. After baking, allow the casserole to rest for 5 to 10 minutes before cutting. Serve with powdered sugar sprinkled on top.

  • Make ahead breakfast. Let the French toast casserole soak overnight or even few hours before baking so the flavors have time to blend.
  • You can replace milk with half and half for even richer flavor.
  • Before baking, sprinkle the top with a cinnamon sugar mixture. Mix two tablespoons of sugar with 1/4 tsp of cinnamon.

Storing and Reheating

Store– If you have any leftovers, store them in an airtight container in the fridge for 3 to 4 days.

Frequently Asked Questions

What Type Of Bread Is Best For French Toast?

I like to use Brioche as it’s buttery and mildly sweet. That’s what sets it apart from regular bread. The closest substitute is Challah bread.
You can definitely use regular bread or sourdough bread slices but you might want to increase the sweetness.

Is French Toast Supposed To Be Soggy?

It shouldn’t be soggy or mushy on the inside. French toast is supposed to be cooked well. If you find your casserole is still soggy, bake it for a few more minutes.

  • ½ cup heavy cream
