There are couple of traditional recipes for eggplant which I'm deeply in love with but those call for deep frying them first. A process that I'm trying to steer away from. And so far I've been successful thanks to S and the kids who are not into fried foods except for the occasional treats outside.
Apart from using the eggplants in Sambar(lentil curry with vegetables) this is my go to dish when I need a quick veggie/eggplant fix for my main meals.Rice or roti.
In case you're wondering what's that brownish specks on my rice,that's Oat's For Rice.An oat mix you cook along with rice.It's a great addition of fiber and calcium to the otherwise mainly starchy rice.It was introduced in UAE recently. Now, I never cook my rice without them.
I too make eggplants in a similar way...and always like them with garlic. The pictures are beautiful..love the first one.
I saw the oats for rice in supermarket but was hesitant to take it..but next time I will grab the packet.

Beautiful shots. I never really cook eggplant except for doing bajis or deep-frying them with a spicy masala as a side for rice. But, I absolutely adore baba ganujh, mutabelle--my fav way to cook & eat them 🙂 I'm intrigued about this oats for rice, gotta check it out in the stores here.
I can say by the looks of it that it would have tasted surely awesome. Lovely eggplant curry for rotis. Here the temperature reads -3 degrees and I wish for Summer to come soon ;p

I actually do not like eggplants, but this dish looks very tempting!
It is been months since I saw these kind of baby brinjals here. I miss them really.I'm really impressed with oats for rice. If possible give some details about how the texture and taste.
