Air Fryer Chicken Quesadillas
If you need something on the table in under 15 minutes with minimal effort, this is it. These Air Fryer Chicken Quesadillas are crispy on the outside, melty on the inside, and packed with a creamy sriracha chicken filling that you’ll make on repeat.

If you’ve tried my Air Fryer Grilled Cheese, you already know the air fryer is the best thing to happen to quick lunches – and this one is right up there with it.
The secret weapon here is rotisserie chicken. It’s a weekly buy and I have the chicken shredded to throw into any dish. These Air Fryer chicken quesadillas have become our favorite easy lunch and snack because the filling takes five minutes to throw together and the air fryer does the rest.
I’ve been making quesadillas for years and the air fryer genuinely changed the game for me. You get that perfectly golden, crispy shell without having to stand over a pan flipping things around. It’s hands-off, it’s consistent, and it’s faster. Once you make them this way, you won’t go back to the stovetop version.

Ingredients For Air Fryer Quesadillas
* Quantities are in the recipe card below.

- Flour tortillas (small)– Small tortillas fit perfectly in most air fryer baskets. Large ones can buckle and the filling slides around. Stick with small.
- Rotisserie chicken, shredded – Pick it up from the grocery store on the way home. Shred it with two forks or just use your hands – it comes apart easily. Both white and dark meat work here.
- Mayonnaise – Just one to two tablespoons. It acts as a binder and keeps the filling from drying out in the air fryer.
- Sriracha – Goes into the filling AND gets drizzled on top of the cheese before you close the quesadilla. or use my spicy mayo sauce for the chicken.
- Shredded cheese – Cheddar, mozzarella, a Mexican blend – all work. Pre-shredded is fine. Fresh-shredded melts a tiny bit better if you want to go the extra mile.
- Green onions – Adds a little freshness and bite to the filling. Slice them thin.
- Salt – Just a pinch. The rotisserie chicken is already seasoned, so you don’t need much.
How to Make Air Fryer Chicken Quesadillas

- Make the filling: In a bowl, combine the shredded rotisserie chicken, mayo, sriracha, sliced green onions, and a pinch of salt. Mix everything together.
- Assemble: Lay one tortilla flat. Spread the chicken filling evenly across it, leaving a small border around the edge. Sprinkle the shredded cheese on top, then drizzle a little extra sriracha over the cheese. Place the second tortilla on top and press down gently.
- Secure it (important!): Press the quesadilla down firmly with your hand. You can slide in a toothpick or two to keep the top tortilla from lifting, or a small wire rack on top. This stops the top tortilla from flying around in the air fryer.
- Air fry: Preheat your air fryer to 380°F (195°C). Place the quesadilla in the basket and air fry for 3 minutes. Carefully flip it over and air fry for another 3 minutes on the other side. It should be golden and crispy.
- Slice and serve: Let it sit for one minute before cutting. Slice into wedges and serve with your dipping sauce of choice.
No rotisserie chicken?
- Leftover grilled chicken, canned chicken (drained and shredded), or even shredded turkey works. The rotisserie version is just the easiest because the seasoning is already done for you.

How to Make a Cheese Quesadilla in the Air Fryer
No chicken? No problem. A plain cheese quesadilla works just as well with this method and is just as crispy and delicious.
Spread a thin layer of mayo on the inside of each tortilla first. Load one tortilla with shredded cheese, drizzle sriracha inside if you like a little heat, then place the second tortilla on top. Press down firmly, secure with a toothpick, and air fry at 380°F for 3 minutes per side.
Great for younger kids, lighter snacking, or honestly just when you want something simple. Serve with salsa or sour cream for dipping.

Serving Suggestions
These are great on their own but even better with a little something on the side for dipping. Salsa or pico de gallo are classics, but if you really want to take it up a notch, try them with my spicy mayo or bang bang sauce – both are incredible with the sriracha kick already in the filling. A few slices of avocado or a simple salad on the side keeps things light and rounds it out nicely.

Air Fryer Chicken Quesadilla With Rotisserie Chicken

Equipment
- Air Fryer
Ingredients
- 2 flour tortillas small
- 1 cup rotisserie chicken shredded
- 2 tbsp mayo
- 1 tbsp sriracha plus extra for drizzling
- ½ cup shredded cheese
- green onions sliced
- salt pinch
Instructions
- Mix shredded chicken, mayo, sriracha, green onions, and salt in a bowl until combined.
- Spread filling onto one tortilla. Top with shredded cheese and a drizzle of sriracha.
- Place the second tortilla on top. Press down firmly. Secure with a toothpick or a small wire rack.
- Air fry at 380°F (195°C) for 3 minutes per side.
- Rest for 1 minute, slice, and serve.
Notes
- Use my Spicy Mayo mixed with chicken instead of mayo and sriracha.
- Leftover grilled or canned chicken can substitute for rotisserie.
- To make a cheese quesadilla: Skip the chicken filling, spread a thin layer of mayo on the inside of each tortilla, fill with shredded cheese, and air fry at 380°F for 3 minutes per side. Simple and just as crispy.
- Store in an airtight container for up to 2 days.
- Reheat: Air fryer at 350°F for 2 to 3 minutes.
- Avoid the microwave. Freezing is not recommended as the tortilla texture suffers.
