Apple picking

I couldn’t wait until fall this year to go apple picking. I missed the cherry picking this summer for some party, bbq or the other. Ever since we moved to Canada last winter, apple picking has been on my bucket list. My kids and husband were not very enthusiastic thinking it will be boring or mundane. But little did they know how fun and satisfying it was to pick an apple from tree and enjoy it’s crisp and juiciness then and there. Somehow the very same apples tasted better right out of the tree than at home. We had a lovely time stepping up ladders, picking up and tasting apple varieties and filling our sack to the brim. They cannot wait to do it again.

cut and whole apples in a bowl

We exhausted ourselves munching on apples. Apple pie is my youngest’s favorite. And I wanted to make a few recipes using apples. Till I get to do some baking with apples I wanted a quick and easy recipe to use the stash we have. Enter easy sauteed apples. They are a cinch to make. I get my kids to peel and core the apples. A fun and simple task to keep them occupied when they come to you bored.

Flavourings

Add the flavours to your liking. I like cinnamon but my husband doesn’t. With kids it’s a hit and miss. If it’s for the entire family I skip the cinnamon and add vanilla extract. If it’s me and the kids then loads of cinnamon graces the apples. Yum ! I throw in cinnamon sticks, staranise and some cloves if I feel a little fancy and make it for myself.

Sliced vs. Chopped

I prefer sliced apples when snacking this easy sauteed apples on it’s own. Or as a standalone side dish for a family meal. This will be great for a Thanksgiving table.

If I need to top it on porridge, chia pudding or on pancakes I prefer them chopped.

Using cornflour

If you want a silky sauce mix a teaspoon of cornflour with a tablespoon of water and add in the end. Or leave it out altogether for a pure unmixed version of this easy sauteed apples.

Sweetness

Adjust the sweetness to your liking. I used Red Delicious apples and they are already sweet. If you want to use sugar brown sugar is the best. About 3 tbsp or a 1/4 cup would be sufficient. Melt the butter and add the sugar and let it dissolve.

Apple varieties

Sweet apples are the best. Red delicious, Gala and Jonagold variety are some I use. The green apples like Granny Smith are tart and need more sweetness. If tart and sweet is your thing, balance the tartness by adjusting the amount of maple syrup or sugar.

Ingredients

  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1 tsp ground cinnamon optional
  • 4 apples peeled, cored and sliced thinly or chopped
  • 2 tsp vanilla extract
  • 1 tsp cornflour
  • 1/4 cup water

Instructions

  • In a large pan over medium heat, melt the butter.
  • Add the maple syrup, cinnamon and apples. Mix the apples in the mix to coat.
  • Cover the pan and cook for 5 minutes. If the apples are still hard, you can add the water and cook it for further 3 to 5 minutes. I don't like mine soft so I cook for about 7 minutes. Cook for 10 minutes for soft apples.
  • Once the apples are cooked to your liking add the vanilla and stir.
  • Mix the cornflour in 2 tablespoons of water and add to the apples and cook for 1 more minute for a silky sauce. If you're not using cornflour, remove the apples from heat and let it cool. I like mine warm.

Notes

  1. Store the leftovers in a container in the refrigerator for upto 5 days.
  2. Warm it in the microwave or stove top when ready to eat.
