Kiwi Mint Lemonade

 

Zespri Arabia did it again, that is to send me another box of kiwis. This time it was a pleasant surprise, in the form golden kiwis. I have never tasted golden kiwis before. Eagerly, I cut open a kiwi,scooped out the golden flesh and started devouring. The note of lemonade hit me sharply as I was warned. It was still not fully ripe. I gave it a few days and since the Ramadan started the box of kiwis was not disturbed very much.

The next time I tested the kiwis, the skin indented to the touch and I knew it’s time. It was blissfully sweet with no hint of tartness. Here is a fruit that should be eaten as it is, cooking it in any form will hide it’s subtle sweetness and flavor. I racked my brains and poured over recipes to use this golden kiwi. All the while, biting into it seen the kiwis from the box vanish right under my nose. I feared that I won’t be able to come up with anything before my stock of kiwi runs out. I didn’t want to destroy all the vitamins and minerals by cooking the kiwi,so I made a lemonade with it perfect for Iftar/Breaking Fast. A time you crave something sweet and juicy to quench your 15 hour thirst.

It was a nice addition to our Iftar table. Do you know that kiwifruit is one of the healthiest fruit varieties on the planet ? It’s rich in Vitamin C,almost twice as much as an orange an three times more than a lemon.It’s filled to the brim with antioxidants and is rich in fibres. Kiwi Mint Lemonade
1/3 cup raw sugar (You can increase depending on your level of sweetness or use any other sweetener)
1 cup water
1/2 cup fresh mint leaves
4 GOLD kiwis
1 or 2 lemons juiced
Sparkling water (or plain carbonated water)
Ice cubes

Boil sugar and water together till the sugar dissolves.Take off from heat and add the mint leaves and cover it and let it steep for about 10 minutes.
Peel the  kiwis and process in a blender or a food processor.
Strain the mint syrup mixture,add the pureed kiwis and lemon juice.
Add the lemonade in individual glasses or a pitcher and fill with sparkling water and ice cubes.
Enjoy !

  1. Farwin, that lemonade is bursting with freshness through my screen! I don't like tart Kiwis at all and it's always a hit or miss when it comes to buying them. Hopefully, I'll be able to find a few ripe ones and am super eager to try this lemonade. Was thinking of using Jaggey to sweeten it. Let's see In sha Allah.
