    Instant Pot Savory Steel Cut Oatmeal

    I didn't try making steel cut oat porridge for a long time because of the time it takes to cook. But with the electric pressure cooker, I can cook and even forget it. Cooking steel cut oats in the Instant pot takes only 30 minutes. Now you can have a warm breakfast on the table in half an hour.

    As much as I like sweets, I'm a savory breakfast gal. In fact, I created 5 savory oatmeal recipes which is widely popular and have been linked in many articles.

    This Instant pot savory steel cut oatmeal porridge is creamy, with a slightly chewy texture and so flavorful. We're using a few flavor boosters like chicken stock, fried onions, and chili flakes for a spicy kick. I used coconut milk to make it creamy so it's dairy-free too. I top the savory oats with an egg for more protein. This oatmeal porridge is so versatile you can add your favorite flavors and toppings.

    Also, you can make a big batch in the Instant pot to have throughout the week, which is ideal for meal prep. Steel cut oatmeal retains the shape and you won't end up eating mushy oats.

    With the goodness of steel cut oats and the efficiency of Instant pot, with this recipe, you can have a nutritious, warming porridge that's hearty and full of flavor for breakfast, lunch, or dinner!

    What is Steel Cut Oatmeal?

    Oatmeal is a staple breakfast in many parts of the world. It's warm and so filling! It's also used to make muffins, muesli, granola, and many breakfast items.

    Oat groats- the whole unbroken grain- are first toasted at a low temperature and then processed into different oat varieties.

    Steel cut oats, also called Scottish or Irish Oats are produced by cutting the oat groat into several pieces, resembling broken rice.

    They take the longest to cook, have a chewy texture and retain their shape even after cooking. For this reason, it's widely used to make porridge.

    Are Steel Cut Oatmeal Healthy Than Regular Oatmeal?

    Steel cut oats are rich in protein and fiber because they are the least processed. Oats are also an excellent source of Vitamin B complex.

    Since steel cut oats are high in fiber, they may have a lower glycemic index, meaning they'll keep you full for long.

    INGREDIENTS

    • Steel cut oats - preferably organic if you can find
    • Butter
    • Chicken stock
    • Salt, Black pepper
    • Coconut milk - canned or coconut cream
    • Oil - olive oil, vegetable oil or any neutral oil
    • Mustard seeds
    • Cumin seeds
    • Onion
    • Red chili flakes
    • Egg - Fried, oppoached or sunny side up for topping

    Melt the butter and add oats to the inner pot.

    Toast the oats for a few minutes adding salt and pepper.

    Add chicken stock, stir and pressure cook for 10 minutes on high.

    Natural pressure release for 15 minutes and add the coconut milk.

    Stir and leave it on warm for a few minutes. The consistency should be creamy.

    In a skillet, heat the oil, and add the seeds, onion and chili flakes. Fry until golden.

    Stir in the fried onion mixture and serve warm.

    How To Cook Steel Cut Oats

    Cooking a warm bowl of Instant pot steel cut savory oats porridge is so easy. Here's how to do it:

    1. Press the saute button in the Instant pot and when it's hot, add the butter.
    2. When the butter is melted, add the oats, salt and pepper and toast for a minute or two.
    3. Stir the chicken stock in and close the lid. Cook on high pressure for 10 minutes.
    4. When the time is up, do a natural pressure release for about 15 minutes.
    5. While the oats are cooking, heat a skillet on medium high and add mustard seed, cumin seeds, chopped onions and red chili flakes.
    6. Saute till onions are golden.
    7. When the valve is down, open the lid and add the coconut milk. Let it warm for a few minutes.
    8. Stir in the fried onion mixture.
    9. Ladle into bowls and top with a fried egg and more fried onions. Serve warm.

    Best Tips For Instant Pot Steel Cut Oats

    Toast the oats - toasting oats for a few minutes with butter in the Instant pot increases the flavor.

    Add chicken stock - you can use just water but use chicken stock for more flavor. Trust me on this!

    Make it creamy - I used canned coconut milk. You can use cream or any non-dairy milk like almond milk.

    Add tempering - You can serve savory oats right out of the Instant pot and it'll still be delicious. But take it up a notch with the fried onion tempering.

    Thin it down - If it's thick, add more water to thin it down to the consistency you like.

    Top with your favorites - I like to top my instant pot oatmeal with a fried egg or poached, more fried onions, turkey bacon for extra nutrition and flavor.

    What's the ratio of water to steel cut oats?

    I use a 4:1 ratio of chicken stock to steel cut oats in the instant pot.

    How long should steel cut oats be cooked?

    I cook for 10 minutes on high pressure. Then let the pressure release naturally. This would take about 15 minutes.

    Should you rinse steel cut oats before cooking?

    No, it's not necessary.

    Do you need to soak steel cut oats?

    No, you don't need to. But if you soak, you can cut down on the cooking time and the liquid ratio.

    How To Store And Reheat

    Store the cooked oatmeal in an airtight container in the fridge for 3 to 4 days. Reheat in the microwave until warm.

    You can also freeze the oatmeal in a large batch or in individual portions or in the freezer for 3 months. Thaw overnight in the fridge and reheat.

    • Instant Pot/Pressure Cooker

    Ingredients
     

    • 1 cup steel cut oats
    • 1 tablespoon butter
    • 1 teaspoon black pepper
    • 1 teaspoon salt
    • 4 cups chicken stock
    • ½ cup coconut milk canned

    Tempering

    • 1 tablespoon oil
    • 1 teaspoon mustard seeds
    • 1 teaspoon cumin seeds
    • 1 medium onion, chopped
    • 1 teaspoon red chili flakes

    Topping

    • 1 or 2 eggs, fried, poached

    Instructions
