Line a 6-inch baking pan that could fit in the air fryer with parchment paper.
Preheat Air Fryer at 390 degrees F for 3-4 minutes.
In a large bowl, mix all-purpose flour, baking powder, sugar, and salt.
Whisk the egg, melted butter, buttermilk, and vanilla extract in another bowl.
Add the wet ingredients to dry ingredients and mix until combined. Don't overmix.
Add the pancake batter to the baking pan. Air fry the pancake for 5 minutes. Flip the pancake and air fry for 3 to 4 minutes until cooked. The top shouldn't be wet and spring to the touch.
Transfer the pancake to a plate and cut into four. Serve with syrup and strawberries.
Notes
Serves 2 but can be easily doubled for another batch.
Foil pie pans can be used for individual pancakes.
