Air Fryer Pancakes

Ingredients
 

  • ½ cup + 1 tbsp all-purpose flour
  • ½ tsp baking powder
  • 2 tsp sugar
  • salt
  • ½ cup buttermilk
  • 1 egg
  • 1 tsp melted butter
  • 1 tsp vanilla extract

Instructions
 

  • Line a 6-inch baking pan that could fit in the air fryer with parchment paper.
  • Preheat Air Fryer at 390 degrees F for 3-4 minutes.
  • In a large bowl, mix all-purpose flour, baking powder, sugar, and salt.
  • Whisk the egg, melted butter, buttermilk, and vanilla extract in another bowl.
  • Add the wet ingredients to dry ingredients and mix until combined. Don't overmix.
  • Add the pancake batter to the baking pan. Air fry the pancake for 5 minutes. Flip the pancake and air fry for 3 to 4 minutes until cooked. The top shouldn't be wet and spring to the touch.
  • Transfer the pancake to a plate and cut into four. Serve with syrup and strawberries.

Notes

  • Serves 2 but can be easily doubled for another batch.
  • Foil pie pans can be used for individual pancakes.
