Air Fryer Eggplant
Make healthy and delicious Air fryer roasted eggplant in just 15 minutes. These spicy eggplant cubes are so versatile and can be used as a side dish or in pasta, curries or salads.

Cut the eggplant into 1 inch cubes.
In a large bowl, toss the eggplant cubes with olive oil.
Mix together salt, garlic powder, turmeric powder, red chili powder in a small bowl.
Add the spice mix to the eggplant and toss to coat.
Preheat Air fryer to 375°F. Place the eggplant cubes on the Air fryer basket.
Air fry for 10 minutes or until golden and crispy.
Serve immediately.
Store - leftovers in an airtight container in the fridge for 3 to 4 days.
Reheat - in the air fryer at 350F for 2 to 3 minutes until warm.
Seasoning Ideas -
add 1 to 2 tbsp parmesan cheese and 1/2 tsp Italian seasoning
add 1 tsp brown sugar
