Equipment

  • Spice/Coffee Grinder

Ingredients

  • ¼ cup cardamom pods 20 g
  • 3 tbsp ground ginger 15 g
  • 1 tbsp cloves 5 g
  • 1 tbsp cinnamon 5 g, preferably Ceylon cinnamon
  • 2 tsp black pepper
  • 1 tsp fennel seeds
  • 1 tsp nutmeg optional

Instructions

  • Add all the ingredients to a spice grinder and grind until they become a fine powder.
  • Store in an airtight jar.

Notes

    • I use Ceylon cinnamon as it's the original and easier to crumble. Or use ground cinnamon.
    • For the best aroma and flavor, grind fresh spices instead of using pre-ground ones (except ground ginger, of course!).
    • This chai spice mix will keep fresh in an airtight jar for up to 3 months.
    • Make sure you keep your spices in a cool dark place, away from sunlight to extend shelf life.
