Apple Chia Pudding Recipe

This delicious apple chia pudding recipe is easy to make with only a few ingredients. Enjoy as a filling breakfast, dessert or as an after-school snack.

Ingredients
 

  • ½ cup chia seeds
  • ½ cup apple sauce or apple puree
  • ½ cup plain yogurt
  • 1 cup milk of your choice
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon optional

For the Apple Sauce

  • 2 apples peeled,cored and chopped
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ cup water

Instructions
 

Chia Pudding

  • In a large mug add chia seeds followed by apple sauce, yogurt, maple syrup, cinnamon and vanilla extract. Mix well until there are no clumps of chia.
  • Add the milk and mix well.  Cover and refrigerate overnight or for 2 hours.  The chia pudding should be thick and creamy. The seeds should look puffed up. 
  • Enjoy as it is with sauteed apples on top. Or layer them apple sauce. Drizzle with maple syrup if you want it sweeter.

Apple Sauce

  • In a pan over medium heat add the apples, maple syrup, vanilla extract and water. 
  • Cover and cook until apples are really soft and mushy about 10-15 minutes. Take off from the heat.
  • Puree in a blender or a food processor.

Notes

Store in the refrigerator covered for up to 5 days.
