Instant Pot Savory Steel Cut Oatmeal is a healthy and hearty meal you can have for breakfast, lunch, or even dinner! Cooking steel cut oatmeal in the instant pot is so easy and quick and you'll love this warm porridge!
Press the saute button in the Instant pot and when it's hot, add the butter.
When the butter is melted, add the oats, salt and pepper. Toast the oats for a minute or two.
Stir the chicken stock in and close the lid. Cook on high pressure for 10 minutes.
When the time is up, do a natural pressure release for about 15 minutes.
While the oats are cooking, heat a skillet on medium high and add mustard seed, cumin seeds, chopped onions and red chili flakes. Saute till onions are golden.
When the valve is down, open the lid and add the coconut milk. Let it warm for a few minutes.
Stir in the fried onion mixture.Ladle into bowls and top with a fried egg and more fried onions. Serve warm.
Notes
Store - in an airtight container in the fridge for 4 to 5 days.
Reheat - in the microwave until warm.
Freeze - the entire batch or in individual portions in a zip lock bag in the freezer for 3 months.
