These are the BEST Cake Mix Cookie Bars with chocolate chips ever! Simple and quick to make, they're soft, chewy and loaded with chocolate chips. Great to feed a crowd.
Preheat the oven to 350℉. Line a 9x13-inch baking dish with parchment paper.
In a large bowl, stir together the cake mix, lightly beaten eggs, oil and vanilla extract. The batter will be very sticky.
Mix in the chocolate chips.
Transfer the batter to the lined baking dish. Using a spatula or your fingers, spread the batter evenly in the baking dish. Place M&Ms or more chocolate chips on top of the cookie dough and press down a bit.
Bake for 20-25 minutes or until the top is golden brown. Let the cookie bars cool down for a couple of minutes and transfer them to a wire rack. Slice them into bars.
Notes
You can substitute more chocolate chips instead of M&Ms. Use any kind of chocolate chips or candy you prefer.
The batter will be hard and sticky. You can thin it down with a tablespoon of milk.
Use a rubber spatula or wet your fingers to spread the evenly on the baking dish.
Once cooled, store the cooke mix bars in an airtight container for 4-5 days. Note that they will harden a bit as they sit. You can also store them in the fridge.
