-Beef -Oil -Onion -Tomatoes -Vinegar -Curry leaves -Green chili -Pandan leaves -Garlic and ginger -Whole spices - cardamom, cloves and cinnamon -Curry powder -Red chili powder -Coconut milk

Cut beef into 1.5" to 2" pieces. In a bowl, mix beef cubes with curry powder, chili powder. vinegar and salt. Let it marinate.

In a pot, heat the cooking oil. Add cinnamon stick, cloves, cardamom, curry leaves and onions. Cook until onions turn slightly brown.

Add ginger garlic paste and fry until the raw smell disappears. Pour in the chopped tomatoes and cook for a minute or two.

Next, add the marinated beef to the pot and let it cook for a couple of minutes stirring occasionally.

Add 2 cups of water, stir and let it come to a boil over medium high heat. Cover the pot, turn the heat to low and let it simmer for about 30 minutes.

Mix in coconut milk and tomato paste if using. Adjust seasoning to taste. Cover and let it simmer for 15 to 20 mins until beef is tender. Serve with rice!
