These delicious blueberry scones can be made in the Air fryer in just 10 minutes for breakfast or snack. They are soft, full of blueberries and tastes amazing! They are great with a dollop of whipped cream or on their own with a cup of tea!
In a large mixing bowl, mix together flour, salt, sugar and baking powder.
Mix in the cold chopped butter to the flour until it resembles coarse crumbs.
Add in beaten egg, lemon zest and milk. Stir until combined and a loose dough forms.
Gently stir in the blueberries.
Dump the dough on to a floured surface and gently knead until dough is no longer sticky. Cut into 8 wedges.
Whisk the egg yolk and milk together in a small bowl.
Arrange the wedges in a single layer in the air fryer basket. Brush with egg. Sprinkle some demerara sugar on top.
Bake the scones at 350F for 10 to 12 minutes or until golden brown on top.
Notes
Storage - Keep in an air tight container at room temperature for 2 days. Keep in the fridge for 5 days. Reheat in the microwave or in the Air fryer in a low setting.
Freeze - Freeze the scones in a zip lock bag in the freezer for 3 months. Reheat using your preferred method.
Variations - raisins, walnuts or chocolate chips can be added instead of blueberries.
