Equipment

Ingredients
 

  • cup butter softened
  • cup natural cane sugar or brown sugar
  • 1 teaspoon vanilla extract
  • 2 medium eggs
  • 1 cup mashed bananas or 2 large bananas mashed
  • 1 ¼ cup all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup walnuts chopped

Instructions
 

  • Beat the softened butter and sugar until butter turns pale.
  • Add eggs one at a time and beat after each addition. Add vanilla extract, mashed bananas and beat just until mixed with the batter.
  • Fold the flour, baking powder, baking soda, cinnamon to the wet ingredients and stir in until well combined and there are no lumps of flour. Mix in ½ cup of walnuts.
  • Pour the batter into a greased and lined 8"x4" loaf pan. Sprinkle the remaining walnuts and some brown sugar on top. Cover with foil and pierce the foil in several places with a knife.
  • Preheat the Air fryer for 325 degree Fahrenheit for 3 minutes. Place the covered loaf pan in the basket and bake for 40 minutes or until a skewer inserted in the center comes out clean.
  • Remove the foil and bake at 250 degree Fahrenheit for another 5 minutes for the top to brown.
  • Remove the basket from the Air fryer and let it cool. Transfer the banana bread to a cutting board and let it cool. Slice and serve.

Notes

  • Storage - Store at room temperature, covered for 2 days. In the fridge for 5 days. Reheat in the microwave if you prefer.
  • Freeze - Wrap the individual slices in plastic wrap and freeze for 3 months. Thaw overnight in the fridge and reheat in your preferred method.
  • Variations - add ½ cup chocolate chips instead of walnuts. Sprinkle sliced almonds or chopped cashews on top.
  • Pan sizes - This recipe is tested on 8"x4" loaf pan. You can use a 7" round cake pan. Or 2 mini loaf pans. If using mini loaf pans, decrease the cooking time. Check for doneness at 25 minutes and cook for more if needed.
