Instructions
Gather all your ingredients. Strawberries, sweetener and lemon juice.
Add the ingredients to a pan and cook on medium high heat. Bring to a boil while stirring constantly.
When the strawberries are cooked mash them with the back of your spoon. Let it cook for a few more minutes to reduce moisture.
Switch off the fire and add chia seeds. Leave it on the stove till the chia seeds bloom and the jam cools.
Store in an airtight container or a mason jar. And store in the refrigerator for up to 10 days.
Notes
You can xanthan gum instead of chia seeds. Use about ⅛th of a spoon along with other ingredients when cooking.I used Erythritol but Xylitol or Monk fruit blend will work just as fine. Increase the sweetener amount if you like it sweeter. *Please note that Xylitol is harmful for pets. For a smoother jam, blend the strawberries before cooking or after cooking but before adding the chia seeds.Refrigerate in a air tight container for up to 10 days.
