Air Fryer Pumpkin

Air fryer pumpkin with pecan and cranberries.
Air fryer pumpkin cubes make a simple and easy side dish perfect for Fall. These roasted pumpkin cubes are tender with caramelized edges and so delicious.

Equipment

Ingredients
 

  • 2 pound pumpkin peeled and cubed
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cinnamon
  • 1 teaspoon rosemary
  • 1 teaspoon salt

To serve

  • ½ cup pecans
  • ¼ cup dried cranberries

Instructions
 

  • In a large mixing bowl, add the pumpkin cubes and drizzle oil all over it. Toss to coat.
  • In a small bowl, mix together cinnamon, garlic powder, salt, and dried rosemary. Add the spice mix to the pumpkin and mix well so that all the cubes are coated with the spice mix.
  • Place the pumpkin in a preheated Air fryer. Air fry at 400˚F for 16 to 18 minutes until the pumpkin is tender and caramelized on the edges. Shake the basket halfway through.
  • Roast the pecans along with the pumpkin to save time. Add the pecans to the Air fryer basket in the last 2 minutes of the cooking time.
  • Remove the pumpkin cubes and serve with pecans and cranberries.

Notes

  • Seasonings options - paprika, cayenne pepper, onion powder, dried Thyme or oregano
  • For a sweet version add 1 tablespoon of maple syrup or brown sugar.
  • Store leftovers in an airtight container in the fridge for 3 to 4 days.
  • Reheat in the Air fryer or microwave until warm.
