Chocolate Cake Mix Cookies

These chocolate cake mix cookies are fudgy, moist and so delicious and are ready in less than 20 minutes. And you only need 4 ingredients to make this super easy chocolate cookie recipe.

Ingredients
 

  • 1 box chocolate cake mix 15 oz
  • ½ cup vegetable oil or melted butter
  • 2 eggs lightly beaten
  • ½ cup butterscotch chips
  • ½ cup chocolate chunks

Instructions
 

  • Preheat oven to 350°F. Line two baking sheets with parchment paper.
  • In a large mixing bowl add cake mix, eggs, oil and mix until combined. The dough will be sticky. Mix chocolate chunks and butterscotch chips in.
  • Using a medium cookie scoop, drop dough on the baking sheet 2 inches apart.
  • Bake for 10 to 12 minutes until the tops are set. Cookies will be soft but will harden once cooled. Place a few chocolate chunks and butterscotch chips on top of each cookie while they're still warm.
  • Transfer the cookies to a cooling rack.

Notes

Store:

Once cooled, store the cookies in an airtight container for 3 to 4 days. Note that the cookies will become soft and cake-like as they sit. Can be stored in the fridge too.

Freeze:

Once cooled, store the cookies in an airtight container or bag and freeze for 3 months. You can warm it in the oven at 350F for a few minutes.
