Equipment

Ingredients

  • 4 mini sweet potatoes or about 1.5 pounds
  • ¼ cup melted salted butter
  • 1 teaspoon cinnamon
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 tablespoon chives chopped

Whipped Maple Butter

  • ¼ cup butter softened
  • 1 teaspoon maple syrup

Instructions

  • Wash the sweet potatoes thoroughly and pat dry.
  • On a chopping board, place the sweet potato between two chopsticks and slice thinly. Taking care not to slice all the way through. Having the chopsticks firmly on place will prevent that. Trim the ends of the sweet potatoes if they are dried and dirty.
  • In a small mixing bowl, whisk together melted butter, garlic powder, cinnamon and salt. Brush the flavored butter over the sweet potatoes.
  • Place the potatoes in the Air fryer basket and fry them at 400°F for 20 minutes. Or until the flesh is cooked and skin is crispy. If not, lower the temperature to 350°F and cook a few minutes more.
  • Remove the sweet potatoes from the Air fryer and let it cool.
  • To make whipped butter, beat softened butter until light and fluffy and stir in the maple syrup. Serve the sweet potatoes with whipped maple butter on top and chopped chives.

Notes

  • Oven - Bake it in a preheated oven at 400 degree F for 20 minutes or until the soft on the inside and crispy on the outside. Follow the rest of the instructions above.
  • Storage - Leftovers can be stored in the fridge, covered for 5 days. Whipped maple butter can be kept at room temperature covered for 3 days.
  • Variations -
    • Add pumpkin pie spice instead of cinnamon.
    • Add spiced paprika to the flavored and whipped butter both.
