Crispy Parmesan Air Fryer Zucchini Fries are flavorful and so delicious! With a crunchy coating and tender inside, they're low in carb, calories and good for you. Enjoy your new favorite healthy snack or appetizer!
Cut the zucchini into sticks. Pat dry with paper towels.
In a small bowl lightly beat the eggs. Add the breadcrumbs, parmesan cheese, kosher salt, pepper, paprika and garlic powder in to a shallow dish and mix till combined.
Dip zucchini in eggs and then in the bread crumb mixture and place them on a baking sheet.
Preheat air fryer to 390 degrees F. Line the Air fryer basket with parchment paper or use an olive oil cooking spray to spray the basket.
Place the breaded zucchini on the air fryer in a single layer. Spray oil on the zucchini lightly. Working in batches, air fry zucchini for 7 to 10 minutes until crispy and golden brown. You can flip them and air fry for another minute or two if you prefer.
Remove air fried zucchini from the basket and serve with your favorite dipping sauce.

Recipe Tips:
Use small zucchini as they have fewer seeds and are less watery.
Pat dry the zucchini sticks throughly with paper towels to remove excess moisture.
Don't overcrowd the air fryer basket. Place the zucchini in a single layer and cook in several batches.
Once the all fries are cooked, you can warm them up in the air fryer for a minute or two.
Variations:
Use any seasoning mix or spices you prefer like Italian seasoning, cajun seasoning, lemon pepper seasoning for the bread crumb mixture.
Leave out panko crumbs or use almond flour for low-carb, keto zucchini fries.
Storage:
Store leftover zucchini fries in an airtight container in the fridge for 3 days.
Reheat them in the air fryer at 375˚F for a few minutes until warm crispy.
