Equipment

Ingredients
 

  • 3 zucchini small
  • 2 eggs
  • ½ cup panko breadcrumbs
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ cup grated parmesan
  • 1 tsp salt
  • ½ tsp ground black pepper
  • olive oil cooking spray

Instructions
 

  • Cut the zucchini into sticks. Pat dry with paper towels.
  • In a small bowl lightly beat the eggs. Add the breadcrumbs, parmesan cheese, kosher salt, pepper, paprika and garlic powder in to a shallow dish and mix till combined.
  • Dip zucchini in eggs and then in the bread crumb mixture and place them on a baking sheet.
  • Preheat air fryer to 390 degrees F. Line the Air fryer basket with parchment paper or use an olive oil cooking spray to spray the basket.
  • Place the breaded zucchini on the air fryer in a single layer. Spray oil on the zucchini lightly. Working in batches, air fry zucchini for 7 to 10 minutes until crispy and golden brown. You can flip them and air fry for another minute or two if you prefer.
  • Remove air fried zucchini from the basket and serve with your favorite dipping sauce.

Notes

Recipe Tips:

  • Use small zucchini as they have fewer seeds and are less watery.
  • Pat dry the zucchini sticks throughly with paper towels to remove excess moisture.
  • Don't overcrowd the air fryer basket. Place the zucchini in a single layer and cook in several batches.
  • Once the all fries are cooked, you can warm them up in the air fryer for a minute or two.

Variations:

  • Use any seasoning mix or spices you prefer like Italian seasoning, cajun seasoning, lemon pepper seasoning for the bread crumb mixture.
  • Leave out panko crumbs or use almond flour for low-carb, keto zucchini fries.

Storage:

  • Store leftover zucchini fries in an airtight container in the fridge for 3 days.
  • Reheat them in the air fryer at 375˚F for a few minutes until warm crispy.
