To prep the beets for cooking, cut the greens, root and stem. Scrub the beets and wash off any dirt or dust. Cut the beets.
Place a trivet or steamer basket in a 6qrt Instant Pot and add 1 cup of water.
Place the beets on the rack and close the lid. Turn the valve to the "Sealing" position. Choose the pressure cook time according to the size of your beets.
When the pressure cooking is done, let the pressure release naturally , then do a quick manual release. Once the beets are cool enough, peel the skins.
To make marinated beets, cut the cooked beets into small pieces and toss them in vinegar, olive oil, salt and pepper. Let it marinate for 30 minutes.
