Easy Instant Pot Beets(Beetroot)

Beet is a highly nutritious root vegetable. They have a sweet earthy flavor. Beets have been one of my favorite vegetables growing up. My kids, not so much. I needed to find other ways. Incorporating cooked beets in different ways in our meals is one of the easiest options.

I love cooking beets in the instant pot and it produces tender, flavorful beets every time. It’s the easiest, hands-free way to cook beets. This method is so simple and I won’t be going back to boiling beets on the stovetop again. I have included marinated beet recipe that you can make with Instant pot beets that will make even the beet-haters go for seconds.

Why We Love This Recipe:

  • Tender, delicious beets – pressure cooking is the perfect way to make fork-tender beets while preserving their nutrients. Boiling beets will also produce tender beets but most of the flavor and the nutrients will be diluted.
  • Ready in about 30 minutes – Once the Instant Pot comes to pressure you need only 20 to minutes to cook the beets. Cooking time varies based on the size of the beets.
  • Easy cooking – You don’t have to worry about pots of boiling water anymore. I love my Instant pot because it makes steaming and cooking veggies so much easier.
  • Healthy – Beets are loaded with vitamins and minerals and this simple beets recipe is Paleo, Whole 30, and vegetarian/vegan friendly.

Ingredients

  • Beets – both red beets and yellow beets can be used. If you buy fresh beet with the greens attached, cut the greens off. Use the beet greens for sauteing or in salads.
    • If you can, try to buy beets the same size as the cooking time differs based on the size of the beets. If the beets are in different sizes, you can cut the large ones into quarters and the medium ones in halves, so that all the beets will be the same size. Cooking time will be based on the widest diameter beet in the pot.

For the Marinated Beets

  • Vinegar – balsamic vinegar or white vinegar
  • Oil – extra virgin olive oil or avocado oil
  • Kosher Salt, Ground black pepper

How To Cook Beets In The Instant Pot

STEP ONE: To prep the beets for cooking, cut the greens if they’re still attached, root and stem. Scrub the beets and wash off any dirt or dust.

STEP TWO: Cut the beets into the same size if they’re a variety of sizes or leave the beets whole.

STEP THREE: Place a trivet or steamer basket in a 6qrt Instant Pot and add 1 cup of water.

STEP FOUR: Place the beets on the rack and close the lid. Turn the valve to the “Sealing” position. Choose the pressure cook time according to the size of your beets. Pressure cook beets on High Pressure.

STEP FIVE: When the pressure cooking is done, let the pressure release naturally for some time. Then do a quick manual pressure release. You can check the tenderness of the beets using a fork.

STEP SIX: Once the beets are cool enough to handle, peel the skins. It will come right off.

Instant Pot Beet Cooking Times

  • SMALL BEETS – cook for 10 minutes and NPR (natural pressure release for 10 minutes)
  • MEDIUM BEETS – cook for 15 minutes and NPR for 10 minutes
  • LARGE BEETS – cook for 20 minutes and NPR for 10 minutes.
  • For small to medium-sized beets, you can cook them for 15 minutes with 10-minute NPR.
  • For medium to large beets, cook them for 20 minutes with 10-minute NPR.

Marinated Beets

Making marinated beets from pressure-cooked beets is so easy.

  1. Once cooled, cut the cooked beet into 1-inch pieces.
  2. Toss them with vinegar, olive oil, salt, and pepper in a large bowl.
  3. Leave for 30 minutes to marinate.
  4. Check and adjust seasoning.
  5. Enjoy immediately or store in a jar in the fridge for 2 to 3 weeks.

  • Pressure cooker beets taste delicious on their own or with a sprinkle of salt and pepper and lemon juice.
  • Serve them as marinated beets as per the recipe above.
  • Mix them in salads or grain bowls.
  • Serve them as a side with your favorite chicken or meat dish.

How To Store Cooked Instant Pot Beets

Cooked beets will keep in an airtight container in the fridge for 3 to 4 days. You can freeze them up to 3 months.

Marinated beets will keep in an airtight container in the fridge for 2 to 3 weeks.

Common Questions

Do you need to peel the beets before cooking?

No, you don’t need to. I prefer to cook with the peel on. Once cooked, the peel easily slides off the beet.

How to avoid beet stains?

To avoid beet stains, you can do the following.

  • Use gloves when handling or cutting beets.
  • Do not peel before cooking. Cooked beet doesn’t stain much as raw beets. You can peel the skin off easily after cooking.
  • Wash the cutting board and knives immediately after using.

What if my beets are not cooked enough?

After the pressure is released, check the doneness of the beets using a fork. It should pierce easily. If not, cover the lid and pressure cook for an additional 3 to 5 minutes.

Ingredients
 

  • 2 pounds Beets 3 to 4 large

For Marinated Beets

  • 3 tbsp vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

Instructions
 

  • Cut the roots and stem. Scrub the beets and wash off any dirt or dust. Leave the beets whole or cut the beets into the same size if they're a variety of sizes.
  • Place a rack or steamer insert in a 6qrt Instant Pot and add 1 cup of water. Place the beets on the rack and close the lid.
  • Turn the knob to the "Sealing" position. Choose the pressure cook time according to the size of your beets. Cooking times are listed below.
  • When the pressure cooking is done, let the pressure release naturally for 10 minutes. Then do a quick pressure release to release any remaining pressure. Use a fork and check for doneness.
  • Once the beets are cool enough to handle, peel the skins. It will come right off.
  • To make marinated beet, cut the beet into 1-inch pieces, and toss them with vinegar, oil, salt, and pepper. Check and adjust seasonings. Leave for at least 30 minutes for the best flavor.
