Choco Banana Muffins
(adapted from Wishful Chef)
Ingredients:
¾ cup wholweat flour
½ cup unbleached all purpose flour
½ cup light brown sugar
3 tablespoon sifted cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
2 tablespoon ground flax seeds
1 egg
½ cup coconut oil
½ cup plain yogurt
4 tablespoon milk
1 teaspoon vanilla
2 ripe bananas mashed
chopped nuts of your choice(optional)
Method:
Preheat oven to 180 degree celsius.
In a large bowl,combine wholewheat flour,all purpose flour,baking powder and soda,salt,cocoa powder and ground flax seeds.
In a separate bowl,whisk together egg,coconut oil,yogurt,vanilla and milk.Mix wet into dry ingredients until moistened.
Fold in nuts if you are using them.
Fill the muffin cups till they are two thirds full.Bake for about 25 minutes or until a toothpick inserted in the middle comes out clean.
Cool for 5 minutes and transfer to a wire rack.
Notes:
It's best to refrigerate the extra ones you don't plan to eat the same day.You can warm in the microwave or take it out from the refrigerator 5 or 10 minutes before you want to have it.
