Apple Chia Pudding Recipe

This delicious apple chia pudding recipe is ridiculously easy to make with only a few ingredients. It’s great as a healthy breakfast, dessert or even an after school snack.

Like everybody out there, I too got into the chia bandwagon a few years ago. I remember the first time I had a taste of chia pudding. It was in a corner shop called Swan’s in our town Naas, back in Ireland. We had gone for a celebratory Eid breakfast after prayers. And they didn’t have any gluten free breakfasts. Only the chia pudding. The pudding was thick and creamy with a slight hint of sweetness. Topped with a raspberry puree that’s both sweet and sour which nicely complemented the luscious pudding.  I bought some chia seeds home that day. I couldn’t convince my family to try the pudding. They developed a dislike even before tasting it.

Recently I grabbed some organic chia seeds from our local Costco hoping to get some much needed fibre into me. One day this past summer, I was at a loss as to what to make for breakfast for the kids. And I quickly mixed up some chia pudding in the night and gave it for breakfast without a word. Kept some chocolate chips and sauteed apples as toppings. The mugs were polished for my amazement. That’s how we started having chia in our life again.

If it’s not for breakfast we have it as an after school snack. I love how easy this apple chia pudding recipe is to make.  Mix the all the ingredients and refrigerate overnight. If you want it fast, then 2 hours would be enough for the seeds to plump up. I have done it both ways and they both taste great.

Chia seeds and liquids

For every 3 tablespoons of chia seeds you need 1 cup of liquid. I have used 1/2 cup of chia seeds with 2 cups of liquid. Apple sauce, yogurt and milk. We love this combination. Use whatever combination works best for you. I sometimes use store-bought apple sauce or make my own. I’ve given the recipe for apple sauce too in the recipe card.

Ingredients
 

  • 1/2 cup chia seeds
  • 1/2 cup apple sauce or puree
  • 1/2 cup plain yogurt
  • 1 cup milk of your choice
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon optional

For the Apple Sauce

  • 2 apples peeled,cored and chopped
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup water

Instructions
 

Chia Pudding

  • In a large mug add chia seeds followed by apple sauce, yogurt, maple syrup, cinnamon and vanilla extract. Mix well until there are no clumps of chia.
  • Add the milk and mix well.  Cover and refrigerate overnight or for 2 hours.  The chia pudding should be thick and creamy. The seeds should look puffed up. 
  • Enjoy as it is with sauteed apples on top. Or layer them apple sauce. Drizzle with maple syrup if you want it sweeter.

Apple Sauce

  • In a pan over medium heat add the apples, maple syrup, vanilla extract and water. 
  • Cover and cook until apples are really soft and mushy about 10-15 minutes. Take off from the heat.
  • Puree in a blender or a food processor.

Notes

Can be kept in the refrigerator covered upto 5 days.

    Just now found this recipe when I was looking for a chia pudding using applesauce and yogurt both. I used vanilla Greek yogurt, left out the maple syrup and vanilla extract, and added about 3/4 tsp of cinnamon because apples and cinnamon are such a classic pairing. Very tasty!
