I love cooking chicken this way.This is how the chicken curry is made in our household as far as I can remember.The spices that are crushed and added in final stages of cooking brings out such a nice flavor and aroma which I defenitely look forward to enjoying.

Chicken curry - my style

Surprisingly,this is one of my favourite dishes since childhood when I despised all sorts of greens on my food.Maybe it's the subtle flavour of Maldive fish combined with red chillies that tantalized my taste buds or the distinct slippery texture and flavour of the leaf or the childhood memories it brings..Whatever that is,it still remains one of my favourits.


Though it's hard to find the fresh large Kankun leaves here in Dubai,I received two bunches of rather small leaves and I put it to use immediately.





Kankun Stir-Fry(Water Spinach or Morning Glory)


Ingredients
2 small bunches of Kankun leaves,washed and drained
1/2 of medium onion chopped
1/4 of large tomato chopped
1 tsp Maldive fish chips
2 dried red chillies broken and deseeded(to reduce the heat factor)
1/2 tsp cumin seeds
few curry leaves
sprinkle of turmeric powder
sprinkle of chilli powder
Oil
Salt to taste


Method
  • Heat oil in a kadai or a wok and add cumin seeds.When they begin to change color add onion,curry leaves with a sprinkle of salt and saute them till the onions start to brown.
  • Add the tomatoes,maldive fish chips and dried chilli with the turmeric and chilli powders sauteing all the while.
  • Add the leaves,fry till it changes color.Add salt.
  • Adjust seasoning.
Enjoy with hot rice and curry.I even have it with roti and tastes good on it's own too.

Kankun Stir-Fry

This is my first cupcake in the upcoming cupcake series. I came across this magazine that had some amazing cupcakes and I'm determined to try all of them out.

Chocolate and coffee goes hand in hand and out comes this wonderfully delicious treat.


Mocha Cupcake

Ingredients (makes 12 cupcakes)

90 g unsalted butter
1/2 cup castor sugar
1/2 tsp vanilla essence
2 eggs
1 cup self-raising flour
15 g cocoa powder
1 tsp instant coffee
1 tbsp hot water
*For the icing
1 1/2 cups unsalted butter
1 3/4 cups icing sugar
50 g dark chocolate

Method

  • Dissolve instant coffee in 2 tbsp hot water and set aside to cool.
  • In a mixing bowl cream butter,sugar and vanilla essence and add eggs slowly.
  • Mix in sifted flour and cocoa powder.
  • Add the dissolved coffee and mix well.
  • Spoon batter into muffin cups and bake in a pre-heated oven at 180 c for 16-18 mins.
* For the icing
  • Melt chocolate and keep aside to cool.
  • Cream butter and sugar till light and fluffy.
  • Then mix in the melted chocolate.
  • Spread the icing evenly over the over cooled cupcakes before serving.
Notes:

*Since I didn't have self-raising flour I substituted with the following
1 cup All Purpose flour + 1 1/2 tsp baking powder + 1/2 tsp salt
but if you are using salted butter omit the salt.
*I reduce the quantities in half for the icing and still got a decent amount of frosting to cover my little gems.



Winding down with a cupcake,a hot coffee in hand...heavenly!!!
